Recipe: Upside down apple crisp

Posted

This week I am featuring apples! We have three apple trees, and two are producing well this year. The last one has big apples that ripen at the end of September.

To celebrate our regional abundance of apples, here's a recipe for apple crisp.

I made one yesterday morning with apples freshly picked from our backyard trees. It was completely gone in record time.

Ingredients

6-8 apples, peeled and thinly sliced
1 cup of apple juice
1/4 cup of flour
1/2 cup of sugar
1/4 cup of brown sugar
1 teaspoon of cinnamon
1 teaspoon of nutmeg
1/4 teaspoon of allspice
Small pinch of ground cloves
Pinch of salt
2-1/2 cups of prepared granola (from the cereal aisle)
1 stick of butter

Instructions

Use the butter to thinly coat an 8x8 square baking pan, saving the rest. Layer 1/2 of the granola on the bottom of the baking pan, saving the rest. Mix the sliced apples with the flour, apple juice, sugar and all spices.

Pour the apple mixture on top of the granola in the baking pan.

Layer the remaining granola over the apples. Dot with the remainder of the butter, placing it on top of the layer of granola.

Place in a preheated oven at 350 degrees for 45 minutes, until it is fragrant and crisp.

Serve hot, warm or cold and, I suggest, with vanilla ice cream.

Enjoy!
