Recipe: Apple Crisp

We are blessed with an abundance of many varieties of apples here in the Pacific Northwest. My family benefits from three apple trees in our backyard, and they produce lots of fruit every year.

Keeping this in mind, I routinely make apple sauce, pie and apple crisp.

Here is my simple and delicious recipe for apple crisp. 

INGREDIENTS

6-8 apples of any variety (you can mix several different varieties) peeled, cored and thinly sliced.
1/4 cup of raisins
4 Tablespoons of butter, divided
1/2 cup of sugar
1 teaspoon of cinnamon
1 teaspoon of nutmeg
1/4 teaspoon of allspice
1/8 teaspoon of ground cloves
1 package of your favorite granola, between 10-12 oz. I often choose Trader Joe’s grain-free granola, which also makes this dish gluten-free.

INSTRUCTIONS

Preheat the oven to 350 degrees.

Place the sliced apples in a large mixing bowl. Add the raisins. Stir in sugar and all of the spices. A liquid will form. Make sure you stir to coat all of the apple slices.

Butter the bottom and sides of the baking dish. Place the apples evenly in the pan. Top with an even layer of granola. Dot the top of the granola with small amounts of butter.

Place the baking dish into the oven and bake for 45 minutes to an hour, until done.

Serve alone or with a side of vanilla ice cream.
