Recipe: Hawaiian chicken salad

Aloha! I just spent some time in Hawai'i. In Kailua-Kona, I discovered a lovely little cafe called the Hungry Honu Smoothie Bar & Cafe. It serves a particularly delicious chicken salad, and the staff there kindly shared the surprisingly simple recipe with me.

Once home, I tested it in my kitchen and it turned out just as good as theirs, but without the wonderful music provided by Stephon Bushon and the ocean beach across the street. Here's the recipe: 

Ingredients

1 pound of baked or rotisserie chicken, shredded
4 stalks of celery, diced
1/4 Cup of sweet onion, diced
1 tsp of granulated garlic
1/2 Cup to 1 Cup of pineapple tidbits, either fresh or canned
3 Tablespoons of chopped jalapeños that have been seeded
1/2 Cup of mayonnaise

Instructions

Mix all ingredients in a large bowl and chill. Serve with crackers, bread or on top of a bed of lettuce.
