Recipe: Easy slow cooker coq au vin

Coq au vin is a French dish that cooks chicken and vegetables in red wine. Today’s recipe is an easy version for preparing in a slow cooker. I think this process promotes this popular dish's unique flavor.

Ingredients

3 large boneless, skinless chicken breasts, cut into 3 pieces each
2 tablespoons of vegetable oil
3 large carrots peeled and cut into bite-size pieces
1 sweet onion, chopped
3 cloves of garlic, finely diced or pressed
1/4 cup of brandy
2 cups of red wine
1 cup of chicken stock
1 teaspoon of dried thyme
A dash of salt
A dash of black pepper
10 white mushrooms sliced thickly

Instructions

Place the vegetable oil in a large frying pan on the stovetop, and using medium heat, lightly brown the chicken breast pieces on each side.

Set the slow cooker on low heat, and add the chicken stock, carrots, onions, mushrooms, garlic and spices. Nestle the browned chicken breast pieces on top of the vegetables. Pour the brandy and wine over the contents of the slow cooker.

Stirring occasionally, cook for 4-6 hours until the chicken is cooked through and the vegetables are tender.
