Recipe: Port Angeles Summer Slaw

I’ve been traveling over the past few weeks; it is good to be back in Thurston County. First, I visited friends on the Olympic Peninsula and in the Seattle area, and then I went on to Charleston, South Carolina. My journey was interesting and fun, with amazing food at every stop.

Of course, the Olympic Peninsula was beautiful, and it was wonderful to spend time with good friends. My friend Autumn’s home has a view of the sound and Victoria BC, along with a huge raspberry patch! We grilled one evening, and she made a delicious slaw with lots of vegetables. I liked it so much, that I made one when I got home. Autumn has given me permission to share it with you.

Ingredients

One half of a fresh green cabbage
One-fourth of a red cabbage
4 green onions
One small- to medium-sized zucchini
One large carrot, grated
One-fourth of a fresh cauliflower
3/4 Cup of green peas, (frozen work fine)
1/2 Cup of fresh kale
3/4 to 1 cup of prepared mayonnaise
Salt and pepper to taste

Instructions

Using a very large mixing bowl, place the thawed green peas and shredded carrot in the bowl.

Wash and dice the zucchini into small pieces, and add it to the bowl.
Wash and slice the green onions, using both the white and green portions. Add to the bowl.

Dice the cauliflower into bite-size pieces and place into the bowl.
Next, clean and dice the kale, remove the fibrous center, and add it to the bowl.
Core and dice the red cabbage and add to the bowl.
Core and dice the green cabbage, and add it to the bowl.

Your bowl should be large enough to easily toss and combine all of the ingredients until the mixture is homogeneous.

Then, add mayonnaise as the dressing. I like to start with smaller amounts and mix it in until the right consistency is reached. That is not too much as to overpower the slaw, but not so little either. When the vegetables hold together slightly, that is my cue to stop adding mayonnaise. Lastly, salt and pepper as desired, and chill for a memorable and healthy slaw.
