In Thurston County, we are privileged to have an abundance of berries at this time of the year. We have raspberry canes in our yard, which produced more fruit this year than we’ve ever had. We also have friends who have given us blackberries and blueberries.
Several local berry producers offer great varieties this time of year, too. Although we normally eat our berries fresh, sometimes we need a change. This recipe is easy and delicious, using extra berries.
For this recipe, I prefer to use raspberries, blackberries, marionberries or a mixture.
3 1/2 cups fresh berries
3/4 of a cup of sugar
1 teaspoon vanilla extract
One cup flour
2 teaspoons baking powder
1/2 teaspoon salt
One cup whole milk
1/2 cup of melted butter
In a bowl, combine the berries, sugar, and vanilla extract. Stir until a light syrup forms. It might take a few minutes for the sugar to dissolve.
Meanwhile, in a large bowl, mix the flour, baking powder and salt. Then add milk and stir. Add the melted butter until a thin batter forms. Pour the batter into an ungreased 8 x 8 baking pan. Place the fruit on top. Place the pan in a 375° oven and bake for about an hour.
Serve hot or cold -- and with vanilla ice cream!
