Recipes for Cinco de Mayo

As we approach Cinco De Mayo (it's this coming Sunday), I thought I would share several recipes in preparation for your fiesta!

I have previously posted several recipes to The JOLT that work well for Cinco de Mayo. These include:

Cauliflower Spanish Rice

...  delicious and healthy take on the traditional Spanish rice (click to see it).

Steak Fajita Salad

... unlike many salads, this combines both raw and cooked (and spiced) ingredients (click here to see it).

I suggest also adding refried beans, guacamole dip, salsa and tortilla chips and sangria to the above for a wonderful celebratory meal. Here are my tricks for making these.

Refried Beans 

I prepare refried beans simply by opening a can of vegetarian refried beans, placing the contents in a bowl and stirring in one teaspoon of cumin.  I add a few drops of hot sauce, mix it in, top it with shredded pepper jack cheese, and heat until warm throughout and the cheese is melted.

Guacamole Dip

Peel two perfectly ripe avocados and remove the seeds. Put the avocados into a large mixing bowl. Add 1/4 of a finely diced red onion, three tablespoons of finely chopped fresh cilantro, three pods of garlic finely chopped or run through a garlic press, one half of a ripe plum tomato finely chopped, and a pinch of salt. Stir the ingredients together with a fork, mashing the avocado. Then add the juice of one lime and stir everything together again to combine. As an option, you can add two or three drops of hot sauce. Serve with tortilla chips.

Sangria

Using a bottle of sweet red wine, pour the contents into a large pitcher or bowl. Add small amounts and pieces of fruit, including what you have on hand. Grapes, apples, limes, oranges, strawberries, and peaches work well. Then add one-half of a cup of orange juice and one half of a can of seltzer, which can be flavored. Finish the drink with the juice of one fresh lime. Stir. Serve in cold glasses or over ice.
